Perfect Blueberry Muffins

A great blueberry muffin recipe is worth its weight in gold, healthy blueberry muffins are also one of the best comfort foods. This blueberry muffin recipe is guaranteed to hit the mark.  Apart from the taste factor, they are also quick and easy to make. What’s best of all is that this is a great basic recipe that you can get creative with should you wish.  Blueberries add an anti-oxidant boost, which is why they make a perfect breakfast when are on the run. This recipe is so simple anyone can make the perfect blueberry muffins in just a few easy steps!

Makes: 12


2 1/4 cups self-raising flour
90g butter, chopped
3/4 cup firmly packed brown sugar
125g fresh blueberries
1 cup milk
2 eggs, lightly beaten


1. Preheat your oven to 180°C/160°C fan-forced. Grease a 12-hole, 1/3 cup-capacity muffin pan.

2. Sift flour into a bowl. Using fingertips, rub butter into flour until mixture resembles fine breadcrumbs. Stir in sugar.

3. Make a well in centre of flour mixture. Add in your blueberries, milk and egg. Gently stir until the mixture is just combined. Spoon mixture into prepared holes. Bake for approximately 25 minutes or until a skewer inserted in centre of one muffin comes out clean. Stand in pan for 5 minutes. Turn out onto a wire rack to cool.
